One of my favorite desserts is a lime icebox pie. When I was a kid, we would visit El Fenix restaurant in Dallas, and their most notable dessert was the icebox pie. The lime zest adds a ton of citrus flavor so don’t skimp on the fresh ingredients. If you’re in a rush, skip the homemade crust and use a frozen crust.
