Adobo is an oregano-based spice mixture that, when purchased in stores, is usually made from dried ingredients—dried oregano, onion powder, and garlic powder. This fresh version is infinitely better; use it as a rub for pork, chicken, or beef.

Ingredients

  • 2 garlic cloves, peeled
  • 1 small onion, peeled and quartered
  • 1 tablespoon fresh oregano

Method

  1. Mince all the ingredients together by hand or combine them in a food processor and turn the machine on, stopping to scrape down the sides as necessary.
  2. Use immediately or store in the refrigerator, tightly covered, for a couple of days.
