This is just about my all-time favorite fancy cookie. An Argentinian friend at tango class told me about them and I had to recreate them. They feature an almond butter cookie base that is topped with dulce de leche and as per your taste, the sides are trimmed with coconut. Nothing beats this magnificent cookie and they last (lightly packed in waxed paper) forever.
