This recipe might sound weird at first, but cheese and figs are a classic pairing – why shouldn’t they work in an ice cream?! The richness of the cheese is balanced by the sweet notes of the quality balsamic vinegar. If the figs are ripe, skip peeling and simply wash them.

Ingredients

For the ice cream

  • 500 ml double cream
  • 110 g brown sugar
  • 120

Method

Get the gelato going well ahead of time as it needs about 8 to 12 hours to set in the freezer. Put the double cream and brown sugar in a saucepan and bring to a gentle simmer, then remove from the stove and add the grated cheese. Mix and let the remaining heat melt the cheese. Let the mixture cool before churning it in an ice cream machine. Alternatively, place the mixture in the freezer and st
