Unsweetened fresh coconut is hard to come by and extremely expensive, as you have discovered if you have ever needed it for curries or for making coconut milk or cream. As it freezes well, retaining its character and texture, there is no reason to be without the real stuff.

Method

  1. Pick a medium-sized coconut, one that makes a splashy sound when shaken. Puncture two of the “eyes” in one end with a screwdriver and a mallet. Drain off, chill, and drink the coconut water, which has a light, refreshing sweetness.
