An appealingly fresh lemon extract, smoother and mellower than commercial kinds, the flavor of which comes mainly from lemon oil rather than fresh peel. As the flavor of homemade extract is less intense, double the quantity called for in recipes. Thrift note: When you’re going to squeeze a lemon, first strip off the rind and add it to your extract bottle.
