These tangy, creamy “cheese balls” are made by shaping well-drained yogurt into spheres and coating them with za’atar, an earthy herb blend. Slather this traditional middle eastern spread on warm pita or baguette slices and serve with a bowl of marinated olives.

Ingredients

  • Plain full-fat yogurt, 2 lb (1 kg)
  • Sea salt, ¾ teaspoon

Method

Dampen a thin dish towel with cold water, wring it out, and drape it in a bowl, with the ends overhanging the sides. In a separate bowl, combine the yogurt and salt and mix well. Spoon the yogurt into the center of the towel, then gather up the corners of the towel and tie them together securely with a long piece of kitchen string.
