Ingredients

  • 3 eggs
  • 30 ml (1 fl oz) lemon juice
  • 40 g (1½ oz) carotene
  • 200 ml (7 fl oz) grape seed oil
  • 2 teaspoons salt

Method

Mix the eggs, lemon juice and carotene together, then slowly whisk in the oil until the sauce has emulsified. Season with the salt.
