Rosehips are the fruit of the rose plant. This recipe came about because I noticed the bud-like fruit forming after successful pollination of the flowers in spring, which would then ripen towards the end of summer into autumn. This was perfect for us because our Mum’s roses dish finishes at the end of summer. So the seasonal dish to follow is the rosehip - meaning we get to use the plant twice!
