  • 12 leather jacket cheeks
  • 300 ml (10½ fl oz) olive oil
  • 2 teaspoons salt


Ensure the fish is free of any silver skin or sinew. Heat the olive oil to 64°C (147°F) and cook the cheeks in the oil for about 25 minutes until lightly coloured and slightly crisp. Season with the salt.
