Plunge the crab into boiling water and cook for about 8 minutes. Transfer to iced water until chilled. To remove the meat from the crab, cut into quarters with a large knife or cleaver. Pull the intestines and grey gills from the body and crack the claws with the back of a heavy knife. Remove the crab meat from the claws and body. Dress the crab meat in olive oil, lime juice and some salt.
