  • 1 whole rabbit
  • 100 g ( oz) butter, melted
  • 20 g (¾ oz) salt
  • 2 handfuls of dry straw or hay


Clean the rabbit and remove the kidneys (you can ask your butcher to do this). Coat the rabbit in melted butter and salt, then sear in a large frying pan over medium heat until brown. Use kitchen string to tie the hay or straw around the whole rabbit.

Put the rabbit in a clay pot or flameproof dish with a lid and cook over medium heat for about 1 hour or until cooked through. Remove the straw from the rabbit and carve.
