Collect the freshest pine mushrooms you can find and brush them clean of pine needles and the forest floor. Heat a frying pan to smoking point and sear the mushrooms whole, stalks upwards, until almost black, adding the grape seed oil just before you take them out of the pan. Remove from the pan just before they are fully cooked and allow to rest. Slice the mushrooms and toss in the garlic oil
