A dessert for those hot summer days when you fancy something soft and fragrant, but not too sweet. Rose syrup can be found in Middle Eastern shops, but you can use rose water if this is not available.
Pour the hot water into a small bowl, add the gelatine and stir briskly until dissolved. If the gelatine does not thoroughly dissolve because the water has cooled, stand the bowl in a pan of warm water over a low heat to help it along.
