As soon as I learned about gluten-free oats, this was the first thing that wanted to make with them. Even though I have a laundry list of favorite cookies, oatmeal raisin is definitely my “nostalgia” cookie. I love the way the raisins caramelize while baking, and the chewiness of the oats, delivered on a cloud of cinnamon and brown sugar. These always made me happiest when I was low, and I’ve always been given the highest praise for this recipe, so therein lies the balance, I suppose.
