These tartlets were inspired by the fruit itself, but also by an indelible memory from my time living and cooking at a château in Nans-Sous-Sainte-Anne, France. Covering the stone wall just across the street from the château were wild strawberries. They were little things, no bigger than the fingernail on my pinky finger, but so intensely flavorful that tasting them was like being read the most precise definition of what “strawberry” flavor really was.
