I went through this phase where my obsession with almonds and their myriad possibilities had me baking with them daily for months. I was dumbfounded by their versatility and delicate nature. How could one food be so endlessly changeable and yet so enduringly delicious? These cakes are made with homemade almond paste, as store-bought almond paste is not gluten-free.
