Lomo saltado is a traditional Peruvian dish of seared marinated sirloin with punchy stir-fried veg and fries. It’s magnificent when done well and normally calls for Peruvian ají Amarillo paste, but you can use ancho for this, or whatever chilli paste is easily available. It’s a versatile recipe, so I’ve swapped in halloumi for the steak for a vegetarian version, the firmness of which gives the right texture and it can be oven-baked along with the fries; ideal for family dinnertime.</
