Nothing if not eclectic, this is a twist on an American Southern States classic: beer-can chicken, taking a hop over the border into Mexico for the spice rub and a boat over the sea to Jamaica for the fizz. I’ve cooked it in the oven for ease, but it works perfectly over a barbecue in the summer months, for a really authentic smoky finish.
