We received some persimmons as a freebie in our fruit and veg box. I chose this recipe because it looked seasonal with its Christmas spices. I had to look up how to prepare the persimmons on YouTube, but it turned out to be quite easy in the food mixer, and three persimmons produced just the right amount of pulp. The resulting cookies looked very appealing, but the texture was rather dense and cakey. However, they tasted good, though no-one guessed the mystery ingredient!
