Anyone who’s ever eaten in a botequim has surely tasted Pure de Abóbora com Carne Seca - mashed pumpkin purée with dried beef. Seeking to lighten the dish and add a flash of luxe, I turned the recipe into a pumpkin flan topped with a warm carne seca salad and dressed with a pumpkin seed vinaigrette. This is quite easy to make and can be prepared ahead of time. Instead of pumpkin, you could use butternut squash or acorn squash. Just be sure you use a hard squash for this
