Salmon with Caipirinha Risotto

I like to incorporate the flavours of a Caipirinha into other dishes, both sweet and savoury. I always think of risotto as being a great flavour receptor, so I decided to try a caipirinha risotto. I thought of the classic Italian penne alla vodka where the pasta receives a boost of alcohol.
