Strongly rooted in indigenous cooking and similar to tómales in Mexico, pamonha is a paste made from pureed sweetcorn and milk, which is wrapped and steamed inside corn husks. In Brazil, this street food is prepared either sweet with sugar and cinnamon or savoury with cheese.
