Dulce de leche is now available at most supermarkets. Argentinean brands such as San Ignacio and La Salamandra make silky and smooth caramelised milks. However, I used the canned Nestle brand to develop this recipe and was quite happy with the results. The idea to serve this cake alongside soured cream sorbet came from the typical Brazilian pairing of dulce de leche with cheese.
