Coffee is one of Brazil’s most important commodities and I was itching to make a dessert using such a traditional Brazilian flavour. I tried it in mousses, custards and parfaits. But there is something about a hot soufflé that brings you closer to the sensation of drinking a cup of strong, freshly brewed coffee. The sweetness of the dulce de leche sauce complements the flavour of coffee and adds a velvety taste to the airy texture of a soufflé.
