This classic Brazilian mousse is all about coconut. I like to serve it with a complementary sauce also based on coconut - Baba de Moça. Cloudy and airy, each bite is rich and refreshing with traces of coconut melting in your mouth. Fresh coconut shavings make the best garnish, but lightly toasted dried coconut chips are just as wonderful. This mousse can be prepared up to 3 days ahead of time and kept in the refrigerator covered with clingfilm.
