Croquettes, along with pastel (fried pastries) and empadinhas (little baked pastries), are the snack foods of Brazil. Brought by Portuguese cooks in the early seventeenth century, these little nibbles are served small and large at breakfast, with tea and cocktails.

Method

Preheat the oven to 350°F.

Lightly butter a large cookie sheet.

In the bowl of an electric mixer, add the flour, cheese, butter, and egg yolk and season with salt and pepper. Mix at low speed. Do not overbeat—the dough should be grainy and not pasty.
