Just as we would refer to someone from New York City as a New Yorker, the term “Paulista” is a reference to a person who lives in the city of São Paulo. This dish is a favorite among the Paulistas, and though the recipe has its roots in North Africa, this version’s ingredients are particular to Brazil.
