Mousse de Maracujá

Despite their exotic name, these small aubergine globes are ripe only when they resemble withered old prunes. When you see them on a market shelf in this condition, then you know they will produce the most delicious juice.

Frozen passion fruit puree is available in 14-ounce packages at Latin American and Asian markets and some supermarkets. If using the frozen puree, use the remaining ¾ cup for Passion Fruit Sauce, decreasing the sugar to ¾ cup and the water to ⅓ cup.
