If using fresh passion fruit, cut them in half and scoop out the pulp and juice. Strain the mixture and reserve the juice and seeds separately.
In a nonreactive saucepan, heat the water and sugar over medium heat. When the sugar dissolves, cook another 3 minutes, then add the passion fruit juice or puree and stir until the sauce begins to thicken, about 8 minutes. Remove from the heat.
