Trim the ends off the limes and cut away the zest. Squeeze the pulp and reserve the juice for another use. Cut the zest into ¼-inch dice. You should have 1¾ cups diced zest.
In a nonreactive medium saucepan, combine the diced lime zest and 4 cups cold water. Bring to a boil over high heat and boil for 10 minutes. Drain the zest and cool under cold water. Repeat this process 2 more times
