  • ½ pound white or navy beans, washed and picked clean
  • 1 tablespoon extra-virgin olive oil

Method

Soak the beans overnight with water to cover by several inches.

Drain the beans and place them in a large soup kettle with fresh water to cover by 2 inches. Bring to a boil over medium-high heat and skim off any foam or impurities. Reduce the heat to a simmer and cook for 45 minutes, stirring from time to time so the beans do not stick to the kettle.
