  • 6 ripe guavas, peeled
  • ½ cup superfine sugar, or more depending on the sweetness of the fruit

Method

In a food processor or blender combine the guavas and sugar and pulse on and off until pureed. Taste for sweetness. Strain the puree through a sieve to remove the seeds. Chill thoroughly.

One hour before serving, whip the cream in a chilled bowl to form soft peaks. Gently fold it into the fruit puree. Do not overmix; the pudding should be streaked with white cream. Cover and refrigerate
