Bananas being such a prolific fruit in the tropics, I’m sure this recipe came about early in Brazilian cooking. It is sheer delight. The consistency is similar to that of apple butter, and it requires hours of cooking, as does apple butter. It can be done in a double boiler with an occasional stir and a watchful eye, making sure the lower pan stays filled with hot water.
