Ingredients

  • 1 5-pound loin of pork, trimmed, with a little fat left intact, rolled and tied
  • 4 garlic cloves, peeled and thinly sliced

Method

Place the pork loin in a pan, add the garlic and milk, turn to coat, and cover. Refrigerate for 5 hours or overnight, turning once or twice.

Preheat the oven to 375°F.

Remove the loin from the liquid and discard the liquid. Pat the loin dry and place it in a roasting pa
