Ingredients

  • 24 small green figs, firm and underripe
  • 4 cups sugar
  • 12 cups

Method

Wash the figs and with a sharp paring knife, make a very small X in the center of the bottom side of each fig.

Place the figs in a large nonreactive bowl and cover with cold water. To remove the impurities, place a clean white cotton kitchen cloth over the bowl so that the cloth just touches the water. Replace the cloth with a clean one twice a day for 3 days. The cloth will first turn
