Combine the sugar and water in a nonreactive medium saucepan over medium-high heat. Stir with a wooden spoon until the sugar dissolves, then simmer for 5 minutes. Set the syrup aside and keep it warm.
Peel the mangoes with a sharp paring knife. Starting at the stem end, slice the mangoes in very thin strips, cutting against the large pit, and set aside.
