When purchasing fresh carambola be sure they are a sunny golden color tinged with green with brown-tinted edges. If the edges are very brown the fruit is beginning to rot and the edges will have to be cut off, thus sacrificing the star shape.
Wash the carambola and drain. Slice the fruit into ¼-inch star-shaped slices and set aside.
