When purchasing fresh carambola be sure they are a sunny golden color tinged with green with brown-tinted edges. If the edges are very brown the fruit is beginning to rot and the edges will have to be cut off, thus sacrificing the star shape.

Ingredients

  • 24 large carambola
  • 4 cups sugar
  • cups water<

Method

Wash the carambola and drain. Slice the fruit into ¼-inch star-shaped slices and set aside.

In a medium saucepan combine the sugar and water and bring to a simmer, stirring until the sugar is dissolved. Add the cloves and sliced carambola. Bring to a boil, skim away the impurities, then reduce the heat and simmer for 45 minutes to 1 hour, or until the fruits are translucent and a rich a
