Enjoy this berry compote all year round as it may be made with fresh or frozen berries. Any leftover compote may be used to flavour plain yoghurt.

Ingredients

  • 90 g (3 oz) sugar
  • juice of 1 lemon

Method

  1. Combine the sugar and the lemon juice with 3 tablespoons water in a saucepan. Heat until the sugar is dissolved. Stir in the fruit, bring to the boil, reduce the heat and simmer for 5–10 minutes, or until the fruit is soft but still whole. If using frozen fruit, use from frozen
