These small thick pancakes are known as Scotch pancakes in England and are served hot and buttered with a fruity or a sweet accompaniment.

Ingredients

  • 50 g ( oz) caster sugar

Method

  1. In a small bowl, beat the egg with half the sugar. In a small pan, melt the butter with the rest of the sugar. Remove from the heat and add the milk and 1 teaspoon cold water to the pan.
  2. Sift together the flour, bicarbonate of soda, baking powder, cream of tartar and a
