This dark red fruit conserve may be used in the same way as jam although it has a shorter storage life. It is simply delicious served with buttered toast, brioche, waffles or used as a filling in pancakes.

Ingredients

  • 1 kg (2 lb) mixed fresh or frozen soft red fruits
  • 1 kg

Method

  1. Combine the fruit and sugar with 3 tablespoons water in a large pan and slowly heat for 3–4 minutes, or until the sugar has dissolved, stirring to prevent the sugar from catching on the bottom of the pan. Put two or three saucers or small plates in the freezer.
