Ciabatta is Italian for ‘slipper’, a good description of this rustic oval-shaped Italian loaf The olive oil gives the bread its crusty texture and delicate handling with little knocking back after rising creates the holes.

Ingredients

  • 30 g (1 oz) fresh yeast or 1 tablespoon dried yeast

Method

  1. Prepare the yeast with 440 ml (14 fl oz) water following the method in the Chef’s techniques.
  2. Sieve half the flour into a large mixing
