A traditional Greek festival bread made from honey, raisins and orange and lemon rind, with a rich yellow colour and delicate flavour from the luxurious spice saffron. Wonderful toasted for breakfast.

Ingredients

  • 1-2 good pinches of saffron threads
  • 30 g (1 oz) fresh yeast

Method

  1. Place the saffron in a bowl, cover with 2 tablespoons boiling water and stand for 20-30 minutes. Prepare the yeast with 410 ml (13 fl oz) water following the method in the Chef’s techniques, then add the honey.
