Poaching chicken for chicken or other salads keeps it moist and flavourful. I always use bone-in chicken thighs for this, but of course you may use an equivalent amount of bone-in breasts. The yield in usable meat will be greater with breasts, but the tradeoff is that the bonus broth will be much less flavourful.

Method

  1. Put the chicken in a large pot and add the vegetables and herbs. Pour in the water and give it a good stir, then stir in the salt. Place over a high heat until the liquid approaches the boil, then reduce the heat to delay the boiling for a few minutes while you use a slotted spoon or ladle to skim the foam that accumulates on the surface.
