These little treats take about 5 minutes to prepare and are perfect for a snack, with tea or as an accompaniment to a light soup or salad lunch. If you want to use another type of bread, just stamp out 7.5cm discs with a round biscuit cutter. Sometimes I add a teaspoon of Dijon mustard to the mixture.

Ingredients

  • 115 g coarsely grated Swiss Gruyère or a similar textured cheese
  • 1 medium egg
  • Freshly ground black pepper

Method

  1. Set a rack in the upper third of the oven and preheat to 190°C/gas mark 5.
  2. In a small bowl, use a fork to mix the cheese, egg, pepper and nutmeg.
  3. Spoon an equal amount of the cheese mixture on each slice of bread, spreading it to the edge.
