Bengan Bhartha is an Indian dish made with aubergine, onions and tomatoes cooked usually by roasting the aubergines in the oven and then mashing them together before adding them into a traditional masala onion and tomato-based sauce. This is my mum’s version of the dish and it’s packed full of flavour yet does not use that many spices. Some recipes use a lot more ingredients and spices and complicate the method, yet mum’s way is simple and straightforward to follow, the recipe is simplistic
