Fried eggs and asparagus are a great duo – perfect as a starter, brunch or snack.

Ingredients

  • 250 g (9 oz) sprue asparagus

Method

  1. Trim the ends of the asparagus spears (pencil-thin sprue asparagus doesn’t need peeling).
  2. Melt a knob of unsalted butter in a small non-stick frying pan over a low heat. Crack in an egg, season the white with a little sea salt and cook gently until the white has just set. Remove to a warm plate. Fry the other eggs in the same way; keep warm.
