Seville oranges are best for marmalade making and are available in the shops from around Christmas time until late February and March. This simple and fruity recipe, cooking them whole and then chopping them up, seems the easiest and best of all the recipes I’ve tried. You can adapt it to other fruits, such as grapefruit and lemons, or even a mixture. The pressure cooker, a forgotten kitchen utensil, is perfect for jam-making, as it cuts down the cooking time, although the pans tend not to
