There are two main types of boxty: in the pan, which are fluffy thickish pan-fried cakes, or cooked on the griddle, sometimes called boxty pancakes. Both can be served in many ways as a breakfast dish. Here I served it with rashers of bacon and then drizzled it with honey.

Ingredients

  • 150 g peeled raw potatoes
  • 250 g cooked potatoes in their skins, peeled and mashed

Method

Grate the raw potatoes and mix with the mashed potatoes, flour and bicarbonate of soda, then add enough buttermilk to make a thick batter. Season with salt.

Heat a griddle or frying pan and grease it well with the butter. Drop in a quarter of the mix to make large pancakes or smaller amounts for small ones. Cook for 5 minutes on each side until golden.
