Cod chitterlings are the unformed roe of the cod and take their name from pig’s chitterlings, which they resemble. You’ll only find them for a couple of months around now, and if your fishmonger can’t get them for you, then use herring roes instead. Hedgerow garlic, which resembles garlic chives, can be used just like chives. It has a much more subtle flavour than garlic.
